PEANUT BUTTER & CHOCOLATE CHIP COOKIES

It’s fairly difficult to get decent vegan friendly chocolate chip cookies in shops, so, what do you do? Make your own of course!

Makes: 16 cookies

You will need the following:

75g soft vegetable margarine
50g crunchy peanut butter
50g caster sugar
50g demerara sugar
100g plain flour
1 pinch of salt
100g dark chocolate chips

Preparation method

Prep: 15 mins | Cook: 20 mins

1.Blend margarine with peanut butter and then stir in the sugars.

2.Stir in the flour to make a dough.

3.Shape the mixture into 16 balls, then space them out onto a baking tray and flatten each slightly with a fork (making a criss-cross pattern on the top).

4.Bake cookies for about 15 minutes at 200 C / Gas 6 until light brown.

5.Leave to cool slightly before very carefully transferring them to a cooling rack.
